Who said a ski holiday doesn`t have to include a great culinary experience! Hakuba can
deliver on this more than most ski resorts around the world, with truly amazing seafood
shipped daily from the famous Tsukiji Fish Market, ramen, sushi, teppanyaki, soba, Italian,
Mexican and so much more. Here are our four recommendations for the best fine dining in
Hakuba.
Mimi’s
Located inside the elegant Phoenix Hotel, Mimi’s offers a true fine dining experience. Run by
husband and wife team Kazu & Yuki Shinamoto, the couple brings a passion and focus to
serving the highest quality food made from the best locally sourced produce. Trained in Italy,
Kazu serves classic European dishes reimagined for the Japanese palate. The locally procured
black pork is out-of-this-world while Yuki’s desserts are the best in the Hakuba Valley. I
recommend ordering the rack of lamb dinner with a red wine and a slice of amazing apple pie for
desert.

Traumerei
Situated in an old manor, Traumerei projects class and serves up amazing French cuisine that
will have you talking about it for the rest of your holiday. The 8 course dinner is outstanding,
while the steak is often raved about (but certainly on the expensive side). Traumerei offers
impeccable service led by owner, Nishino, a veritable expert on wine. A beautiful atmosphere for
a special meal, Traumerei is wonderful dining experience.

Teppanyaki Steak Sanno
Teppanyaki Steak Sanno may be the most unique culinary experience to be had in Hakuba as this
tiny restaurant seats only six people, creating an intimate atmosphere that is distinctly Japanese.
The restaurant features high quality Wagyu steak grilled in front of you in true Teppan style. A
line-up of locally produced Whiskeys is the perfect accompaniment to an amazing meal.
Reserve early as this restaurant takes only one booking per night.

Pilar Restaurant
Located 3/4 of the way up Happo One, this French restaurant does the most luxurious lunch
in Hakuba. A four course meal with coffee or tea will set you back ¥4,100 and is well worth
the investment. Our recommended appetizer is marinated Hakuba trout and scallops with
herbal leafs. For an entrée, you can’t go wrong with the Puttanesca spaghetti with Japanese
crab. Our favorite main dish is Pilar`s recommended wild game and afterwards try the
assorted cheese plate for dessert.
